4 Ingredient Complete Meal: BBQ Chicken Stuffed Potatoes with Fried Cabbage

Main Meal: BBQ Chicken Stuffed Potatoes with Fried Cabbage Ingredients

  • 18 oz BBQ sauce (feel free to choose low sugar, keto, or whatever kind you’d prefer. For this recipe I used Kraft Mesquite Smoke BBQ Sauce)
  • 2 chicken breasts (frozen or defrosted, mine were already defrosted)
  • 2 russet baking potatoes
  • 1/2 a head of green cabbage
  • 1 tbsp oil of your choice for cooking (I used olive oil)
  • Optional: red pepper flakes, butter, cheese

Directions

  • In a crockpot, line the bottom with a small layer of BBQ sauce. Place the chicken breasts on top then cover with the rest of the BBQ sauce.
  • Cover the crockpot and cook on low for about 4 hours.
  • After the 4 hours, shred the chicken in the crockpot using two forks. Mix everything in the crockpot together and set the crockpot to warm for another hour.
  • Heat over to 425. Wash both potatoes. Poke holes on all sides of the potatoes using a fork. Drizzle some olive oil and salt onto the potatoes and using your hands coat the potatoes with the oil and salt.
  • Place potatoes on a baking sheet and place the baking sheet in the oven for one hour and 15 minutes.
  • Once an hour has passed, you’re going. to pat the excess BBQ sauce off the chicken. You don’t want a soggy meal. Remove the chicken from the crockpot and place onto paper towels. Pat with paper towels until the chicken is no longer coated in excess BBQ sauce.
  • Remove the potatoes from the oven. Cut the potatoes open lengthwise and smoosh them open being careful not to tear the sides. Spoon the chicken into the potatoes and place back in the oven for 15 minutes.
  • While the potatoes are finishing up in the oven, chop your cabbage. Then heat a skillet on the stove. Add your cooking oil of choice and add the cabbage. Using tongs, regularly mix and fluff the cabbage so it doesn’t burn. You’ll want some of the cabbage to be a bit brown since you’re sauteeing it, but not burned.

    Add protein: you could load up these potatoes with beans or add a protein source to the cabbage
